    Beetroot and Carrot Juice 3 Ways

    Making beetroot and carrot juice is an easy and delicious way to add more vegetables to your diet. Combine carrots and beets with other vegetables as well as fruit and create tasty flavour combinations that are packed full of goodness. There is more than one way to enjoy carrot and beetroot juice!

    How to make beetroot and carrot juice taste delicious

    If you ever tried beetroot juice on its own chances are you weren’t too impressed with the flavour.  Beetroot is sweet but also earthy and not nearly as easy on the palate as orange or apple juice, for example.  Beetroot, however, works well with many flavour combinations so it’s absolutely possible to make it taste delicious.

    Carrots have a lot of natural sweetness, which makes them an ideal juicing vegetable and perfect to juice alongside beets.  (Carrot juice on its own also tastes pretty delicious actually).  

    I have created 3 delicious carrot and beetroot juice combinations, each containing a fruit and another vegetable.  The additional vegetables add even more goodness to each juice without overpowering the flavour.  Each recipe contains a citrus fruit, which in my view is essential in bringing out the flavour of the vegetables and creating a truly delicious beverage.

    How to prepare the vegetables for beet and carrot juice

    All 3 recipes are very quick and easy to prepare and there is very little peeling and chopping involved.  In fact the only ingredients you’ll have to peel are the beetroot (the juice would taste too earthy if you didn’t) and oranges.  The other fruits and vegetables require only rinsing.  No need to core the apples and pears or peel the carrots or zucchini.  Just chop them roughly and make the juice!

    How much juice will I get

    Each recipe will yield approximately 500 ml (about 2.1 cups) of juice.  The exact amount will depend on how large your vegetables and fruit are and how many you end up using (you can adjust the recommended amounts according to preference).

    Equipment you’ll need for making carrot and beetroot juice

    • Vegetable peeler
    • Chopping board and knife
    • Juicer
    • Glasses/jars/bottles for storing the juice

    3. Beetroot, Carrot, Apple and Fennel Juice

    This juice is quite sweet, has a hint of fennel and a lively citrusy finish.

    • 1 medium/large beetroot, peeled, roughly chopped
    • 2 medium carrots, washed, unpeeled
    • 2 apples, unpeeled
    • 1 small or ½ large fennel
    • 1-2 tbsp lemon juice

    2. Beetroot, Carrot, Zucchini and Pear Juice

    The sweetness of this juice is offset by delicious lime juice - you can adjust the amount of the lime juice to suit your preference. 

    • 1 medium/large beetroot, peeled, roughly chopped
    • 2 medium carrots, washed, unpeeled
    • 1 medium zucchini, unpeeled
    • 5 large pears, unpeeled
    • 1-2 tbsp lime juice

    3. Beetroot, Carrot, Spinach and Orange Juice

    This juice is quite citrusy and despite containing a generous amount of spinach it does NOT taste like grass juice😊

    • 1 medium/large beetroot, peeled roughly chopped
    • 2 medium carrots, washed, unpeeled
    • 150 g fresh spinach
    • 2 medium oranges, peeled

    Top tips for making carrot beet juice 3 ways

    • Preparation: Peel the beetroot and oranges but only rinse the other fruits and vegetables (no need to peel them).
    • Adjust the recommended amounts according to preference. Use more fennel, lime and lemon juice for example.
    • Use sweet apples or a mixture of sweet and sour apples (I used 1 of each). 
    • Best served chilled.
    • Storing: Store leftover juice in a jar or bottle and refrigerate for up to 2 days.

    Ingredients

    Beetroot, Carrot, Apple and Fennel Juice

    • 1 medium/large beetroot peeled, roughly chopped
    • 2 medium carrots washed, unpeeled
    • 2 apples washed, unpeeled
    • 1 small fennel or ½ large, washed
    • 1-2 tablespoons lemon juice

    • 5.29 ounces (150 g) fresh spinach
    • 2 medium oranges peeled

    Instructions

    • To make each juice place the ingredients in the juicer (not the lemon and lime juice) and make the recipes. Add the lemon and lime juice into the first 2 recipes. Enjoy chilled. Keep leftovers refrigerated in jars/bottles for up to 2 days.

      It says 6 servings, does that mean each recipe has 6? Seems like a very small amount of juice for that many servings.
