This avocado feta toast features smashed avocado topped with creamy whipped feta garnished with scallions and a drizzle of honey to complement the savoury profile of this recipe. Healthy and delicious, perfect for breakfast or as a snack.
Prepare feta: Place the crumbled feta and milk in the small bowl of your food processor and blend until smooth and creamy. The mixture will be thick. Transfer to a bowl and set aside.
Toast bread: Toast 3 pieces of bread, either in a toaster or using a large pan (butter one side of the toast or drizzle with a little oil then toast for a couple of minutes on each side).
Smash avocado: Using a fork smash half the avocado on top of each piece of toast (you can mash the avocado on a separate plate first then spread over the toast).
Add feta mixture: Spread 1-2 tablespoons of the whipped feta mixture over each piece of toast and sprinkle with freshly ground pepper.
Add honey and oil: Garnish with scallions then drizzle over the oil and honey. Enjoy!
Notes
Use ripe and soft avocado that’s easy to mash.
The feta mixture should be thick and spreadable (but not quite as firm as cream cheese). Make sure you don’t add too much milk (or yogurt) and turn it into a dip.
The feta can be prepared up to 2 days ahead. Keep covered and refrigerated. If it thickens stir in a few drops of milk to adjust the consistency before using.
Once assembled this avocado feta toast is best served immediately.
Adjust the amounts of oil and honey to your preference.
*Serve with whole wheat/wholemeal bread or Italian bread (not sourdough).
Not suitable for freezing: I do not recommend freezing the feta mixture as this will change its consistency.
