This herring salad is a popular party food idea in Poland, easy to make and full of flavour. It accompanies family gatherings and celebrations including Christmas, but is also often served as an everyday dish.
Boil the potatoes (whole, unpeeled) until tender (you can do this step ahead). Drain and set aside to cool completely. Once cooled peel and cut the potatoes into quarters (or chop them more finely if you like).
In a large bowl assemble all the chopped salad ingredients.
Add the mayonnaise, yogurt, lemon juice and a generous grind of pepper.
Stir gently but thoroughly, taste the mixture and adjust the seasoning/lemon juice if needed. If possible, chill your herring salad for 30 minutes before serving.
Notes
Herring is very salty so you may not need to add any salt into your salad. Pepper can be used liberally.
Use waxy (salad) potato varieties, such as Anya, Jersey Royals, Carola red or yellow potatoes as well as baby potatoes.
You can boil the potatoes ahead and once cooled refrigerate overnight. Peel just before assembling the salad.
Core and cut the apple just before assembling the salad (it browns quickly).
Adjust the recommended proportions to your taste – make it more peppery or creamy etc.
For best results chill for 30 minutes before serving.
